Fall salad with apple slices for cool days.

 

Suitable for the season, today I have a recipe for the delicious fall salad with apple slices and a great buttermilk-apple-dressing. Because salad does not only have to be tasty in summer.

For us, salad is an important part of the weekly diet. So there is one day a week only salad on our menu. But not just a “boring” green salad with a little dressing. We make something unusual and especially change a lot.

So what fits better in fall than a beautiful lamb’s lettuce, with apples, walnuts and cranberries. If you like other nuts, of course you can also use them. The whole is rounded off with a light buttermilk-apple-dressing. Try it, is worth it.

If it is already after winter, you can make also this delicious lamb’s lettuce with mustard vinaigrette and figs.

Zutaten

For the salad:

  • 100 g Lamb's lettuce
  • 75 g Walnut
  • 1 Pcs. Apple
  • 45 g Cranberries dried

For the dressing:

  • 50 ml Buttermilk
  • 1 1/2 tbsp. Apple vinegar
  • 1 tbsp. Sunflower Oil
  • Salt
  • Pepper

Zubereitung

Preparation:

  1. Clean the lettuce, wash and spin dry. Roast the walnuts in a pan and set aside. If necessary, wash the apple, rub dry and quarter. Remove the core and cut into fine slices.

Dressing:

  1. Mix buttermilk, vinegar and oil vigorously and season with salt and pepper.

Finishing:

  1. Finally mix the salad, walnuts, apple slices and cranberries with the dressing.

For a nice tomato salad you don’t need always red tomatoes.

The recipe for this tomato salad is just a coincidence. Last time we went for shopping, I stood in front of a shelf with tomatoes in all shapes and colors. Right after the thought how great the tomatoes look, the thought came that I should make some nice salad from it.

In addition to a great tomato photo, what I posted already yesterday on Facebook, I made this colorful salad. The aim to me was to make not something unusual or complicated, it is a very simple and delicious tomato salad. The taste of the summer, simple and also can be made with ordinary red tomatoes. So grab some tasty tomatoes and enjoy.

As ground I took a HORI vinyl stone tile, which was kindly provided by casando.de.

Zutaten

  • 750 g Tomatoes
  • 1 Pcs. red Onion
  • 1 Tbsp. Vinegar
  • 2 Tbsp. Olive Oil
  • 5 Stalks Basil
  • Salt
  • Pepper

Zubereitung

  1. Wash the tomatoes, dry them and cut into wedges, quarters, slices or pieces.
  2. Peel, halve and slice the onion. Pick the basil leaves from the stalks and cut into fine strips.
  3. Place the tomatoes, onion and basil in a bowl, add oil and vinegar. Mix everything together and season to taste with salt and pepper.

Zutaten

  • 75 g Lentils
  • 100 g Couscous
  • 200 ml Water
  • 1 Pcs. Tomato
  • 1/2 Pcs. Cucumber
  • 1 Pcs. Onion - small
  • 4 Tbsp. olive oil
  • 1 1/2 Tsp. Cumin - ground
  • 1 Pcs. Lemon
  • 1 Tbsp. Tahini
  • 1 Pcs. Pomegranate
  • 2 Stalks Parsley
  • 2 Stalks Mint
  • Salt
  • Pepper

Zubereitung

  1. Cooke the lentils in boiling salt water. Drain and rinse cold.
  2. Add the couscous and the water in a bowl and let them soak.
  3. Cut the tomato into quarters, remove the seeds. Peel the cucumber, the length into quarters and remove the seeds also. Cut tomato and cucumber in cubes.
  4. Peel the onion and chop finely. Heat oil in a pan and fry the onions.
  5. Add the cumin and roast. Remove the pan from the heat.
  6. Cut the lemon in half and squeeze out the juice. Add lemon juice and tahini into the pan and stir everything.
  7. Cut the pomegranate in half and knock the seeds out. Wash parsley and mint, shake dry and pluck the leaves from the stems. Cut the leaves into fine strips.
  8. Put everything in a bowl and mix. Season with salt and pepper.

Today there comes as promised, the next delicious burger on my blog, a caesar chicken burger. Everyone knows and likes caesar salad, and you really got him, especially in the United States, in every restaurant. I have all packed on a great homemade parmesan bun and finished was a tasty burger. In addition make some homemade, crispy potato wedges and you have a tasty dinner.

Today’s Burger is not quite as extravagant as the pulled pork burger last week, but still delicious. If you want the whole thing to speed up, just take bought burger buns. They just “normal” but you already saves a lot of effort and still get a great burger.

Caesar-Chicken Burger

Zutaten

For the Buns:

  • 275 g Flour
  • 1/2 Tbsp. Sugar
  • 1/2 Tbsp. Salt
  • 15 g Yeast - fresh
  • 150 ml Milk
  • 40 g Butter - room temperature
  • 1 Pcs. Egg
  • 75 g Parmesan Cheese - grated
  • Milk - for brushing

For the Caesar Sauce:

  • 1 Pinch Garlic powder
  • 1/2 Tbsp. Mustard
  • 1 Tbsp. Vinegar
  • 50 g Mayonnaise
  • 2 Tsp. Olive oil
  • 50 g Yoghurt
  • 10 g Parmesan Cheese - grated
  • Salt
  • Pepper
  • Lemon juice
  • Worcestershire sauce

For the Potato Wedges:

  • 5 Pcs. Potatoes - about 750 g
  • 2 Tbsp. Cornstarch
  • 4 Tbsp. Flour
  • 4 Tsp. Paprika
  • 4 Tsp. Salt
  • 4 Tsp. Pepper
  • Oil - for frying

For Finishing:

  • 3 Pcs. Chicken breast
  • 2 Tbsp. Oil
  • Lettuce leaves
  • Parmesan shavings

Zubereitung

Buns:

  1. Mix flour, sugar and salt in a bowl and form a trough. Dissolve the yeast in lukewarm milk and pour into the trough. Mix with a little flour from the edge and leave covered 15-minute in a warm place.
  2. Put butter, the egg and parmesan, except for a few to sprinkle, in the bowl and knead to a smooth dough. Covered let rest for about 30 minutes.
  3. Form the dough into 4 equal pieces and into round buns. Put the Buns on a lined baking tray and flatten slightly (about 11 cm diameter). Let them rest covered further 10 minutes.
  4. Brush the buns with a little milk and sprinkle with the remaining parmesan. Bake in preheated oven at 200°C for 20-25 minutes. Remove and let cool.

Caesar Sauce:

  1. Mix the garlic powder, mustard, vinegar, mayonnaise, olive oil, yogurt and parmesan. Season the sauce with salt, pepper, lemon juice and worcestershire sauce.

Potato Wedges:

  1. Wash the potatoes, dry and cut into wedges.
  2. Mix in a bowl starch, flour, paprika, salt and pepper. Turn the potato wedges in and knock off the excess.
  3. Fry the wedges sequentially in 170°C hot oil.

Finishing:

  1. Wash the chicken breasts and pat dry. Put the oil in a hot pan and fry the chicken breasts in about 2 minutes on each side.
  2. Provide griddle to about middle step and cook the chicken breasts to the end, turn over occasionally.
  3. Cut the parmesan buns horizontally, sprinkle the lower half with sauce and top with lettuce leaves.
  4. Cut the chicken breast into strips and place on the salad. Sprinkle with a bit of sauce and parmesan shavings.
  5. Laying upper half bun on top and serve the burgers with the potato wedges.
