Tagliatelle, fried Brussels sprouts and ham

Tagliatelle + fried Brussels sprouts = winter pasta

 

Fried Brussels sprouts is one of the good things in winter. I just love brussels sprouts, and if it’s roasted or fried it’s double good. That is why it is now quite common to make Brussels sprouts for dinner, such as the fried rice with roasted Brussels sprouts. During the last shopping trip, we even found the purple Brussels sprouts. It tastes a bit nuttier and just looks great.

So what was closer to combine the fresh, homemade Tagliatelle with Brussels sprouts. In addition, some ham, onions and a few herbs, finished is a winter pasta dish. Not difficult and so yummy.

Tagliatelle, fried Brussels sprouts and ham

Zubereitungszeit 10 minutes
Kochzeit 15 minutes
Gesamtzeit 25 minutes
Portionen 2 Portions

Zutaten

  • 250 g Brussels Sprouts
  • 1 Pcs. Onion
  • 1 tbsp. Oil
  • 150 g Ham
  • 50 ml White Wine
  • 100 ml Vegetable Stock
  • 2 Portions Tagliatelle
  • 25 g Cream Cheese
  • Herbs
  • Salt
  • Pepper
  • Nutmeg

Zubereitung

  1. Clean and slice the Brussels sprouts. Peel the onion and cut into fine cubes.

  2. Heat the oil in a pan and fry the Brussels sprouts vigorously. After about 5-10 minutes he has already got some color, reduce the heat and add the onion cubes and the ham.

  3. Meanwhile cook the tagliatelle in boiling salted water al dente.

  4. Sauté for about 5 more minutes. Now deglaze with white wine and let this reduce.

  5. Then add the vegetable stock and the still hot tagliatelle. Mix everything together.

  6. Finally, add the cream cheese and herbs to taste and season with the spices.

Fried rice with roasted Brussels sprouts

A fried rice with roasted Brussels sprouts combines two delicious dishes.

 

In the fried rice with roasted Brussels sprouts, I combine the Asian rice with spicy Brussels sprouts. At first glance you think that it does not quite fit because the sprouts with the balsamic and sugar is rather sweet. But the combination with the Asiareis is great. The dish works as a side dish or as a great vegetarian main course.

If you do not get brussels sprouts, you can also make other vegetables very well. Strongly roasted cauliflower fit all year round.

Fried rice with roasted Brussels sprouts

Zubereitungszeit 15 minutes
Kochzeit 40 minutes
Gesamtzeit 55 minutes

Zutaten

For the roasted Brussels sprouts:

  • 500 g Brussels Sprouts
  • 2 tbsp. Olive Oil
  • Salt
  • Pepper
  • 60 ml Balsamic vinegar
  • 1 tbsp. brown Sugar

For the fried Rice:

  • 2 Pcs. Egg
  • 3 tbsp. Oil
  • 75 g Carrots
  • 1 toe Garlic
  • 1 Pcs. Onion
  • 250 g Rice
  • 2 tbsp. Soy Sauce
  • 1 tbsp. Sesame Oil
  • Salt
  • Pepper

Zubereitung

Brussels Sprouts:

  1. Clean and halve the Brussels sprouts.

  2. First marinate the halves with the olive oil and season with salt and pepper. Then place with the cut surfaces down on a baking tray lined with aluminum foil.

  3. Bake the Brussels sprouts in a preheated oven at 200°C for about 15 minutes.

  4. In the meantime, cook balsamic and sugar in a small saucepan.

  5. Remove the Brussels sprouts and turn all halves. Drizzle the cut surfaces with the balsamic vinegar.

  6. Roast sprouts for another 10-15 minutes in the oven.

Fried Rice:

  1. Whisk the eggs in a bowl. Heat 1 tablespoon of oil in a pan and pour in the eggs. Fry eggs upsinde down. Remove and allow to cool.

  2. Peel carrots, garlic and onion and finely dice.

  3. Heat 2 tablespoons of oil in the pan and sauté the carrots. Add the garlic and onion and continue to fry.

  4. Add the rice and sauté while stirring.

  5. In the meantime, cut the egg into small pieces and place in the pan as well.

  6. Add soy sauce and sesame oil to the rice and season with salt and pepper.

  7. Finally, add the Brussels sprouts.
