Why not combine the recipe for homemade tagliatelle with asparagus and shrimp? As long as the asparagus time is, you can do it more often. So if you like homemade pasta, asparagus and shrimp, you should try this recipe.

 

But if you do not like one of the things, or have no time to make the pasta yourself, no problem. The recipe also tastes good with store bought pasta and without shrimps. After the asparagus season, without asparagus, the whole thing does not make so much sense. The recipe for the tagliatelle is available HERE and can be well prepared the day before. Tagliatelle with asparagus and shrimp

Zubereitungszeit 20 minutes
Kochzeit 15 minutes

Zutaten

  • 250 g green Asparagus
  • 1 Pcs. red Onion small
  • 2 Pcs. Tomatoes
  • 2 Stalks Basil
  • 10 Pcs. Shrimps
  • 1 Tbsp. Sunflower Oil
  • 2 Tbsp. Olive Oil
  • Salt
  • Pepper
  • 50 g Parmesan

Zubereitung

  1. Tagliatelle either fresh (go to the recipe), or bought and prepared after packaging instructions.

  2. Wash the asparagus, drain and cut off the ends. Now cut the asparagus into bite-sized pieces.

  3. Peel the onion, halve and cut into rings. Wash the tomatoes, rub dry and quarter. Now remove the core and cut the flesh into strips.

  4. Pluck the basil leaves from the stalks and chop.

  5. Heat the sunflower oil in a pan and fry the shrimp from both sides. Remove the shrimps and set aside.

  6. Now put the asparagus in the pan and fry for about 2-4 minutes, depending on the thickness of the sticks. Add the onions and fry for another 4-5 minutes.

  7. Now put the shrimp, olive oil, basil and noodles in the pan and turn off the heat. Mix everything well and season with salt and pepper.

  8. Finally, grate the Parmesan and stir about 2/3 under the pasta. Then put the finished pasta on a plate and sprinkle with the remaining Parmesan.

Finally this a weekend with nice weather and the colorful pasta with melted tomatoes fits perfectly. This course is once again quite simple and also works with any other pasta. I got the pasta as a present and therefore I used the colorful pasta.

The colorful pasta I have been given, among other things, as a birthday present. My friends follow the recipes and photos on my blog and wanted to contribute and be part of a recipe. So I’ve come up with a simple pasta recipe, which fits perfectly on a hot summer day. Add to that a glass of white wine or a great beer and the evening is perfect.

As ground I took HORI Laminat, which was kindly provided by casando.de.

Colorful pasta with melted tomatoes and mozzarella

Zutaten

  • 200 g colorful pasta
  • Salt
  • 125 g Mini Mozzarella Balls
  • 4 Stalks Basil
  • 1 Pcs. red Onion - small
  • 200 g Cherry Tomatoes
  • 20 g Pine Nuts
  • 2 Tbsp. Olive Oil
  • Pepper

Zubereitung

  1. Cook the pasta in boiling salted water until al dente and drain.
  2. Meanwhile, drain the mozzarella balls. Pick the basil leaves from the stems and cut, except for a few to decorate, into strips.
  3. Peel, halve and cut the onions into rings. Wash the tomatoes, drain and relieve the green.
  4. Roast the pine nuts until golden brown in a frying pan. Remove and let cool.
  5. In a saucepan, heat the olive oil and sauté the onions. Add the tomatoes and wait until they start to burst.
  6. Then remove the pan from the heat and add the pasta, mozzarella and basil. Mix all and season with salt and pepper.
  7. Transfer to plates, sprinkle with pine nuts and decorate with basil leaves.

Everyone knows insalata caprese into slices, today there is again another version. The other day I already presented you tomato mozzarella in a crispy basket. This has been done for a buffet which ago . But those who serves a menu at home and look for an unusual solution for caprese, it’s good to try the version shown today. You need only beautiful cherry tomatoes on the stem and small mozzarella balls. The green of the tomato should not be wilted. Then a bit of tinkering and finished is the feast for the eyes. The workload is kept within limits, but the effect is very good again.

Zutaten

  • 200 g Cherry Tomatoes - on vines
  • 150 g Mini Mozzarella Balls
  • 2 Tbsp. olive oil
  • Salt
  • Pepper
  • 2 Stalks Basil

Zubereitung

  1. Carefully cut the vines in the appropriate length. Remove on one side the tomatoes.
  2. Drain well the mozzarella. Laying the vines on a plate, the mozzarella balls lay on the side where the tomatoes are missing.
  3. Drizzle the whole with a little olive oil, season with salt and pepper. Finally, garnish with some fresh basil.

Tomato Peach Salad with Mozzarella

An unusual tomato peach salad with mozzarella.

Today I have for you with the tomato peach salad a little unusual combination. But this salad is fresh and tastes not only in midsummer delicious. Delicious, sweet peaches, with ripe, juicy tomatoes and mozzarella. This not only sounds after summer and sun, it tastes that way. The whole salad needs to be coarsely chopped, a little balsamic, some spice and you have a super fast and delicious salad. You can use it either as a side dish, or with a slice of toasted bread as a main course. Try it, it tastes much better than you thought at first sight.

Tomato Peach Salad with Mozzarella

Do not be put off by the crazy combination. The salad tastes very good!

Zutaten

  • 100 ml Balsamic Vinegar
  • 1 Pcs. Tomato
  • 1 Pcs. Peach
  • 1 Ball Mozzarella
  • Basil
  • Salt
  • Pepper
  • 1 Tbsp. olive oil

Zubereitung

  1. Bring the vinegar in a small saucepan to a boil until only about 2 EL are left. Pouring from the saucepan into a cup and let it cool.
  2. Wash the peach, halve and remove the stone. Cut the peach into pieces. Wash tomatoes and also cut into pieces. Drain the Mozzarella.
  3. Combine the peach and tomato pieces and put on a plate. Pluck the mozzarella into pieces and distribute it on the peach-tomate salad. Season with salt and pepper.
  4. Cut basil into thin strips and distribute it on the salad. Drizzle the salad with olive oil and balsamic.
